Recipe #3 Summer spring rolls

Technically Ekta already has a twin, but clearly environmental factors have also lead to some twinning benefits between us. We had originally decided to create a nice light summer snack with rice wrappers but we ended up buying egg roll wrappers. I'm so glad we did because this recipe is so easy and probably the best thing to come out of our test kitchens.


Ingredients:

1) Fruits of your choice

2) Egg roll wrappers

3) 1 tbsp Oil

4) Sauce of your choice

*Optional- Something creamy like feta cheese, cream cheese, chocolate, dulce de leche, etc.



Instructions:

Step 1: Cut fruits to desired size.

Step 2: Assemble fruit and optional ingredients diagonally in the wrapper.

Step 3: Use water to seal the wrapper so that none of the fruit peaks out.

Step 4: Drizzle oil on your hands and lightly coat the roll.

Step 5: Place in air fyer at 360 for 9 minutes. Flip half way through.

Step 6: Serve with Sauce of choice. I used a combination of cilantro, jalapenos, lemon, and agave syrup.


Review:

Ekta: This is the happiest mistake recipe ever. I love how flexible this dish is - I could serve this to any guest (adult or child) or make it for a post work out snack. It's so bright and flavorful that it could be a dessert or an appetizer. The only con is that some of the fruits were a little unevenly cooked - hard apples and soft grapes. In the future, I'll try out different versions like chocolate + mangoes and strawberries or a winter version with brie and cranberries. 8.5/10


Sidra: I made a lot of mistakes in creating these rolls, but almost all of that is on me - I'm still a novice air fryer user, and my egg roll wrappers broke in half so I wasn't able to create the picture perfect rolls that Ekta created. Nevertheless, the few rolls I was able to successfully make were fantastic. I went with a breakfast feel and had these with maple syrup, but if you topped them with whipped cream it would make a fantastic dessert, and a mint or tamarind chutney turn this into a great appetizer. The flexibility of this recipe makes it great for any occasion at any time of year, and I will definitely be revisiting this recipe next Ramadan as a replacement to the traditional oily foods that are eaten at Iftar. 8/10
